I'm a true oatmeal cookie monster... I only counted, as well as January 2018, I have shared 47 oatmeal cookie recipes with you. Eep! Have you ever tried any of them yet? (? You'll find all of my oatmeal cookie recipes right there!) They are some of the most well-known recipes on my website cause they taste really sweet and comfy, exactly like conventional"indulgent" oatmeal cookie recipes, but they contain no refined flour or sugar!
That means you'll begin with whole wheat bread (or gluten free, if you want ) and instant oats (like these... or those for a gluten free edition!) . Instant oats are thinner and smaller than conventional rolled oats, and you can locate them at canisters right next to those classic oats at the grocery shop.
I probably sound like a broken record by now... But cause I ? you and want your cookies to flip out totally plump and soft, I'm reminding you again... Measure your flour and oats correctly, applying this technique or even a kitchen scale! (? That's the one I own and adore. A lot of either ingredient is likely to make your cookies taste cakey or sterile, instead of chewy. This is particularly true of the oats--that they behave like little sponges and consume plenty of moisture from the cookie dough!
Ripe bananas- ideal for baking! Really like all of @amybakeshealthy's yummy & wholesome banana recipes!
See these bananas? And all of those brown stains? When it comes to baking with bananas, brown = amazing! I ? extra speckly bananas cause they've a lot bright, bold taste --and also additional sweetness! That is the minimum amount of brown which I suggest. More is better!
The remainder of the cookie dough's sweetness comes in a different natural ingredient... Pure maple syrup (such as this!) . You desire the sort that comes directly from maple trees, which is normally sold in thin glass jars or squat, round plastic jugs. Forget the pancake sugar and sugar-free syrup!

The pancakes include much more sweetness! The freshly bought, extra plump, perfectly soft ones are ideal... But for those who have old, slightly dried out carbohydrates (hmm... it sounds absurd to explain dried fruit as dried outside! ) , that's okay!
Just add them into some microwave-safe bowl, and put water on top until they're completely covered. Seal plastic wrap across the top, and then microwave the bowl on high for 1 minute. Should you let the peppers sit mixing together the cookie dough, then this little trick hydrates them they're incredibly juicy--and that makes a significant difference in these cookies once they're baked!

Yields: 15 cookies
The recognizable cozy spices and plump blueberries make them even more irresistible. They will keep for at least one week if kept in an airtight container in the fridge --if they last long!
1 cup (100g) instant oats (fermented if needed and quantified like this)

1 1/2 tsp baking powder
1/4 teaspoon salt
2 tbsp (28g) unsalted butter or coconut oil, melted and cooled slightly

Using a spoon and spatula, drop the cookie dough into 15 curved scoops onto the prepared sheet, and flatten to the desired depth and width using 20 Healthy Cookie Recipes Eat This Not That a spatula. Bake at 325°F for about 10-12 minutes.
Notes: It's extremely important to measure both the oats and flour correctly utilizing this technique or a kitchen scale. (? That's the one I have and love!) Too much of either will dry out the biscuits and render them cakey rather than chewy.
Immediate oats are also referred to as quick-cooking or moment oats. They arrive in huge canisters, additional info exactly like old-fashioned oats. They are not those at the tiny flavored loaf of bread. To make your own, add the same amount of conservative yogurt into your food processor, and pulse 10-12 days or until the oats will be about 1/4 to ? of the initial size.
For the fermented flour, I suggest the following mix: 1/2 cup (60g) millet flour, 2 tablespoons (15g) tapioca flour, 2 tablespoons (15g) brown rice flour, as well as 1/2 teaspoon xanthan gum. Most store-bought gluten-free flour blends (like this one!) Will also work, if measured like this.
In case your pancakes are elderly, dryer, and not very plump or juicy... Add them into a microwave-safe bowl, and pour water on top until they're fully coated. Seal plastic wrap over the surface, and microwave the bowl on high for 1 second. Should you allow the peppers sit while mixing together the cookie dough, then this little trick hydrates them they're really soft and juicy!
